If you are going to plant a garden make sure to add some root vegetables – awesome freshness all winter long! Root vegetables are easy to store and have a long shelf life. They are great for disease fighting immunity and energy boosting. Root vegetables like potatoes, onions, carrots, celeriac, kohlrabi, and radishes are easy to store. They like cool, dark, humid rooms or store in the fridge in a paper bag in the crisper drawer. Other great winter veggies like winter squash, Brussel Sprouts (let these guys get frosted a few times – they are sweeter this way) and Kale are great for cold winter nights.
